Soba HITOFUSA
①Zaru Soba
The extra-fine nihachi soba noodles(20% wheat flour and 80% buckwheat flour), made with traditional techniques, are served with carefully selected tsuyu (soy sauce). The noodles go down smoothly and have a delightful aroma .

A soba restaurant classic; with seasonal vegetables and shrimp tempura. You can choose warm or cold soba.

③Three Kinds of Local Sake and Soba with Sake Greens
Enjoy delicious local sake from Shinshu, two types of snacks, and a small bowl of zaru soba to finish off the meal! *Not a fixed menu, so please ask.

④Hitofusa Gozen
A special value meal with soba and three kinds of dipping sauces (yam, grated daikon and walnut sesame), prawn and vegetable tempura.

The warm broth is fragrant with the flavors of duck and grilled leek. *Chicken substituted for the duck.
